Salt
Pink-coloured salt was brought to Lake Constance from the mines of the Alps. It was very valuable and expensive, but was well suited to preserving fish and meat. Rubbed with salt or pickled in brine, the food is dehydrated. Salt also inhibits the growth of bacteria. Using salt, for example from Hallstatt in Austria, the village community produced excellent bear ham and fine bacon.
